This is inspired by an Alpine dish I ate as a kid, but with the addition of soft leeks. Spiced with nutmeg and bold taleggio, it's a comfort classic. Sophie x

500g Leeks
2 Cloves of Garlic
40g Butter
500g Paccheri
300ml Double Cream
200ml Whole Milk
350g Taleggio
½ Tsp Nutmeg
60g Parmesan
