Tandoori chicken is a good Indian non-veg starter. It is a marinated chicken cooked in a tandoor(charcoal clay oven). Serve with green chutney or salad. It is a mouthwatering chicken appetizer.

Ingredients:
chicken leg quarters 4 pieces
salt as per taste
black pepper powder 1 tsp.
lime juice 1 tbsp.
mustard oil 5-6 tbsp.
white oil 1 tbsp.
hung curd 1/2 cup
turmeric powder 1/4 tsp.
kashmiri red chili powder 2 tbsp.
cumin powder 1 tsp.
coriander powder 1 tbsp.
garam masala powder 1 tsp.
kasuri methi 1 tsp.
ginger paste 1 tsp.
garlic paste 1 tbsp.
ghee 1 tsp.

Process:
clean the chicken pieces properly. cut 3-4 cuts in the chicken pieces. dry properly.marinate with salt, black pepper powder, and lime juice. in one bowl, take hung curd, turmeric powder, cumin powder, coriander powder, red chili powder, garam masala powder, kasuri methi, ginger and garlic paste, and mustard oil. mix well and beat it. pour the mixture on top of the pieces and coat both sides properly. cover. rest 3-4 hours in the refrigerator (the more the better). After 3-4 hours heat a pan add white oil. when oil is hot, add 2 pieces of chicken. make sure flame is high. fry the chicken both sides lightly and reduce the flame to medium. cover and cook the chicken until the color changes and chicken is soft. we have to do this process with patience and make sure that chicken doesn't burn so switch sides multiple times. once the chicken is soft, remove it and repeat same process with the other 2 pieces. when the second batch is done, keep the 1st batch in the same pan so all 4 pieces are in the same pan. heat a piece of charcoal and put in a small bowl. place the bowl in the middle of the chicken. add some ghee so smoke comes out and cover the pan with a lid so the smoky flavor is in the chicken. remove the lid and our tandoori chicken is ready. serve with green chutney, lime and salad.
