Ingredients

3 whole Eggs
2 oz. Pecorino Cheese 60 g
3 oz. Parmesan Cheese 90g
Freshly ground Black Pepper and salt to taste
Guanciale (Skin removed)
10 oz. Bucatini or Thick Spaghetti

Directions

Start by trimming off the skin of the guanciale. Dice into small pieces then cook for 10 min over low-medium heat. Crack eggs into bowl and whisk, add cheese. Boil Pasta. Add pasta directly to pan, along with egg/cheese mixture, and pasta water. Add freshly cracked black pepper. Stir until creamy. Enjoy :)
