Recipe
1/2 Pound ground beef
1 Lb Rigatoni pasta
1/4 Cup vodka
2 Tbsp basil, chopped
5 Garlic cloves, finely chopped
2 Tsp Calabrian chili peppers, finely chopped
2 Tbsp olive oil for pan
2 Medium shallots, chopped
Salt and pepper to taste
6 Oz can of tomato paste
2 Tbsp unsalted butter
2/3 Cup heavy cream 1/4 Cup pasta water
2/3 Cup parmesan cheese
Bring a pot of water to a boil and season with salt. Cook pasta until al dente. In a large skillet over medium high heat, brown beef and season with salt and pepper. Set aside.
In the same pan, add olive oil and heat over medium heat. Add shallots and cook until fragrant, about 3 minutes. Reduce the heat to medium and add the Calabrian chili peppers and garlic. Cook for 2-3 minutes, until fragrant.
Adjust the heat to medium high and add the tomato paste. Mix to combine. Then add butter into the pan and let melt. Season with salt and pepper and cook the tomato paste for approximately 6 minutes.
Turn the heat down and pour the vodka into the pan. Scrape up all the paste from the bottom of the pan and. I'd together. Adjust the heat to low and add the heavy cream. Stir until combined and let simmer on low heat. Add pasta water, beef, basil, and cheese to the sauce and stir together. Add the pasta and mix until fully coated.
