Homemade Garden Ravioli! #shorts

This a revisited tribute to my Italian origins, making homemade pasta in a sort of untraditional recipe but using fresh produce from my garden!

This reminds me of every Sunday spent and my grandparents house, helping my grandma to make fresh pasta and picking up vegetables from my grandpa garden!

PASTA DOUGH RECIPE:

170g x Vegetable of choice
340g x flour + extra for dusting
1x tsp salt
7 x tbsp aquafaba
Let rest in fridge for 30 min
(Use aquafaba to seal the ravioli)
Boil them 1-2 mins

VEGAN RICOTTA RECIPE:

300g x cashews soaked for 3h
Herbs (sage ,chives & parsley)
Salt & pepper
Water as needed
Garlic optional
Keep in fridge up to 3/4 days

SAUCE RECIPE:

1 x Onion
1 x Garlic clove
1 x Celery stem
Salt & pepper
Sage
Mixed tomatoes
