Chicken Pot Pie with Spelt Puff Pastry

A meal prep friendly recipe you can make in advance. We like cooking a large batch of filling, pack them into individual portions and chill or freeze them. Whenever we want a quick and comforting meal, we simply preheat the oven, fill a ramekin, top with puff pastry and bake!

This recipe works great with other proteins too, pork tenderloin and salmon make great substitute. Try it and let us know what you think!

• Ingredients •
* 500g grilled/roasted chicken breast, cubed
* 50g butter
* 2 onions, cubed
* 2 cloves garlic, minced
* 4 tbsps plain flour
* 500ml chicken stock
* 1 tsp salt
* 1 tsp black pepper
* A pinch of cayenne pepper
* 1 cup cooked carrot cubes
* 1 cup frozen peas
* 1 cup sweet corn kernels
* 1 box carêms spelt puff pastry
* 1 egg (for egg wash)
