Spicy Chorizo and Prawn Fettuccine

The secret to making this dish is the crispy fried chorizo. When cooking the chorizo in a fry pan, it releases that fragrant oil that is smokey and spicy and packed full of flavour. That oil combined with a little EVOO, butter, garlic, fresh chilli and lemon makes a light dressing for the fettuccinie so no tomatoes or cream is needed making this dish quick, simple and uses only 8 ingredients


250 grams fettuccine
2 chorizo sausage, thinly sliced
1 tbsp olive oil
80 grams butter 
5 cloves garlic, crushed
1-2 fresh chilli's, thinly sliced (I used 2)
500 grams raw, peeled banana prawns
salt and pepper
zest of one lemons
Juice of half a lemon
Handful of fresh parsley chopped

Method
Cook pasta in boiling water as per instructions on packet. Once cooked, drain the pasta.
In a large, non stick frypan cook the chorizo until browned and slightly crispy. Remove chorizo from frypan, leaving the oil in the pan.
Over low heat add the EVOO, butter, chilli, garlic and lemon zest to the chorizo oil. Cook for 1 minute.
Add the prawns into the frypan and season with salt and pepper. Cook prawns for a couple of minutes on each side. Add the chorizo back into the pan.
Add the cooked pasta, squeeze the juice of half a lemon, parsley and toss together. Finish off with a drizzle of EVOO and cracked pepper
