Super creamy pasta ready in under 15 minutes!

Ingredients for 2 people:

• 70 g pistachios (1/2 cup)
• 30 g parmesan cheese (1/4 cup)
• 1 garlic clove
• 40 ml olive oil (3 tbsp)
• 5 g basil leaves (about 15 leaves)
• 180 g pasta (6.3 oz)
• Salt to taste
• about 2 ladles of pasta cooking water

Instructions:

1. Cook pasta according to package instructions until al dente in a boiling pot with salted water, reserving some pasta water before draining.

2. In a blender or mixer, blend pistachios, Parmesan cheese, a garlic clove, olive oil, and basil. Also add about two ladles of pasta water and blend until creamy.

3. Drain pasta and return it to the pot. Add the creamy pistachio sauce and toss gently to coat.

4. Adjust consistency by adding reserved pasta water as needed.

5. Serve immediately, garnished with grated Parmesan cheese, fresh basil leaves and pepper if you like.

6. Enjoy your creamy pistachio pasta!
