What’s up Familia!! Just wanted to share this beautiful homemade pasta dish! I infused fresh chopped Spinach to add some flavor to the pasta dough.

Pasta Ingredients:
360 g Double 00 Flour
140 g Semolina Flour
***All Flour Sifted to remove clumps***
4 whole eggs
1 tsp Olive Oil
1/2 tsp Kosher Salt
1 Cup of Spinach blanched for 2 mins, Iced for 3 mins drained and patted dry, chopped finely
Mix using well method- see previous video

Tomato Cream Sauce:
4 Tbsp Olive Oil
2 Tbsp Tomato Paste
Add 2 cloves of Chopped Garlic
1/2 Cup of Heavy Cream
Mix well and finish with few Basil Leaves chopped

Salt pot of Water, bring to a Boil
Blanche Spinach for 3-4 mins, remove
Add Spaghetti to existing Pot and cook for 2-3 mins
Remove and toss Spaghetti into Sauce
Add 1/4 Cup of Pasta Water
Stir to bring everything together so pasta is nicely coated with the sauce
Add 1/2 cup of Freshly Grated Pecorino Romano Cheese
Toss Pasta and serve
