Breading dredge:
- 1 cup all purpose flour
- 3 tablespoon powdered sugar
- 1 teaspoon smoked paprika
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon chili powder
- 1 teaspoon baking powder
Marinade:
- 1 cup water
- 1 cup dill pickle juice
Directions:
- Marinate 2 lbs of boneless skinless chicken thighs (or breast) for one hour or overnight
- Whisk all of the breading ingredients in a bowl
- Whisk 2 eggs and 1/2 cup of milk
- Dip the chicken in the egg and then the dredge and repeat. Doing this twice will make for extra crispy chicken
- Heat your oil to 350 degrees and fry your chicken until they’re golden brown and 165 degrees internal, about 6-8 minutes
- Grab your favorite hot sauce, I used @texaspetesauces and coat your chicken
- Grab your @kingshawaiian rolls and add pepper jack cheese, your fried chicken, dill pickles
- Place in the oven at 350 degrees for 15 minutes
- Slice and serve hot
