Scrambled Eggs #shorts

Serves 1

3 good quality eggs
2 small knobs of butter
Salt to taste
Slice of sourdough bread, toasted and buttered
Pepper and chives to garnish

1. Crack the eggs into a bowl and beat together until all incorporated.
2. Into a cold pan, add the cold butter and egg mixture.
3. Turn heat to medium-low and begin to mix. Keep mixing frequently, making sure not to leave any large parts of egg to overcook on the bottom of the pan (a little is fine).
4. Cook for around 10 minutes, frequently mixing, until the eggs are silky, creamy and custard like. Once cooked, season with salt to taste and mix it through.
5. This is THE best way to have you scrambled eggs. No raw egg and no overcooked egg. Served on toasted, buttered bread and garnished with some pepper and chives. Enjoy!
