HERE'S A QUICK MID WEEK MEAL IDEA ⤵️
Most of the time, I tend to cook protein separately to the sides because one of the two is consumed quicker.
Also, if we combine the same protein with different sides or the same sides with different protein types, the meals feel different.
So, I had leftover baked chicken breasts and for sides I decided to prepare a speedy risotto using @agrotopos mushroom risotto (#noad, #notsponsored)
It contains only 6 ingredients I can pronounce and know what they are so both a delicious and healthy option!
Here's how to prepare the meal:
1️⃣ Sauté garlic, and the risotto for 2-3 minutes.
2️⃣ Pour over 800 ml boiled water and a cube of vegetable or chicken stock.
3️⃣ Stir while cooking.
3️⃣ When water is absorbed, add butter and stir to combine.
4️⃣ Serve on its own or (optional) with chicken breast and fresh cut raw vegetables like tomatoes, cucumber.
