One Pan Vegetable Pasta #shorts

1 pint of cherry tomatoes
8 ounces of sliced mushroom
1/2 bundle of broccolini florets (I saved the stems for an omelette)
1 small onion diced
1 tsp fresh or dry rosemary
1 tsp fresh or dry thyme
3/4 tsp salt
1/4 tsp pepper
2 Tbs olive oil
1lb orzo uncooked
3 cups of veggie broth
3 ounce grated parm
3/4 cup shredded mozzarella

-Preheat oven to 400F
-To a 9x13 baking dish, add tomatoes, mushrooms, broccolini, onion, rosemary, thyme, salt, pepper and coat with olive oil.
-Cook in oven for 15 min.
-Remove from oven, add orzo and broth. Mix well, cover with aluminum foil and return to oven. Cook for 10 min, remove and give a stir to ensure the orzo doesn’t stick to the botttom of the pan, then return to the oven (covered) and cook for 10 more minutes.
- Remove from oven. Use the back of a spoon to burst the tomatoes, add the grated parm and mix well. Top with mozzarella and return to the oven for 5-10 minutes more.
