Today let's make Kalmi kebab, delicious
kebab from mughlai cuisine coated in rich and
flavoursome marinade.
Ingredients :
Chicken 1 kg (you can make this in small
pieces too specifically with drum sticks )
First marinade:
Chicken 1 kg
Ginger and garlic paste 1 tbsp
Turmeric powder 1/2 tsp
Salt 1/2 tsp
Lemon juice
Marinate this for 20 minutes.
Second marinade:
Coriander leaves handful
Mint leaves handful
Green chillies 4 to 5
Salt 1/2 tsp (adjust as per your taste )
Cardamom 3 to 4
Black pepper corn 1 tbsp
Cumin seeds 1/2 tsp
Curd 2 tbsp
Cashew 10 to 12
Water if required
Blend it to a paste and add it to the chicken
Now marinade this for 2 hours or overnight.
Give a charcoal smoke
Shallow fry these chicken pieces ( half
cooked )
then grill it on stove or in charcoal .
Serve this with mayo mint chutney and enjoy
with your family , and I know you are going to
