Zucchini Banana Muffins
1 cup flour
1/2 cup buckwheat flour (or 1/2 cup flour)
1 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1 ripe banana, mashed
1 zucchini, grated
1 tbsp grated ginger
1/3 cup maple syrup
1/3 cup + 1 tbsp plant based milk
1 tbsp apple cider vinegar
1 tbsp ground flax
3 tbsp water
1/8 cup sesame seeds
1/4 cup pumpkin seeds
1/4 cup chopped nuts
2 tbsp brown sugar
1 tbsp sesame seeds
Maldon salt

Preheat oven at 180C
Make buttermilk by adding apple cider vinegar to milk and letting it sit for 5 mins.
Make flax egg by combining water and ground flaxseed.
Mix all dry ingredients together, excluding seeds.
Add wet ingredients to dry and fold without overmixing.
Add seeds.
Spoon into a muffin tin.
Sprinkle with brown sugar, maldon salt and sesame seeds.
Bake for 18-20 mins or until golden.
