1 medium white onion finely chopped
1 large green bell pepper diced
1 large red bell pepper diced
12 large eggs
18 oz cottage cheese 1 tub
1 cup milk
3/4 cup cheddar cheese shredded & divided
1/2 teaspoon salt divided
1/2 teaspoon ground black pepper
1 1/2 tablespoons olive oil divided
