Ingredients: For 1st marinade - Chicken - 500 gm, Lemon/ lime juice- 2 tbsp, salt to taste, 1 inch ginger, 1 tbsp garlic, 4 chillies ( green or red) Roughly grind all the above to a coarse paste. For the 2nd marinade: 15 cashews nuts soaked in hot water for 1/2 an hour & ground to a paste, 2 tbsp thick curd or yogurt, 2 tbsp corn starch, 1.5 tbsp coarsely ground black pepper , 1 tsp Garam Masala, 1 tsp cumin powder , 1 tbsp coriander powder, 1/4 tsp Turmeric, 1/4 tsp salt, oil 3 tbsp. Mix in cashew paste & yogurt with masala powders. Add this paste along with oil. Rub this to the chicken well. Apply extra marinade to any vegetable you have. I have used sweet potatoes. Grill in electric Tandoor for 20 minutes, OTG oven heated to 375° for 35 minutes, or fry on high heat on a greased tawa till it colours for a minute, cover & cook on medium high for 5 minutes. Flip & repeat on the 2nd side.
