How to Make Purple Risotto | Risotto with Red Cabbage

RECIPE:
300 g rice (1 cup + 1/2 cup)
500 g purple cabbage (about half of it)
1 purple onion
1.5 l water (6 cups + 1/4 cup)
40 g butter (3 tbsps)
40 g parmesan (1/4 cup)
80 g white wine or broth (1/3 cup)
50 g provolone cheese (1/3 cup)
15 ml olive oil (1 tbsp)
salt & pepper
