For Veganuary 2024 I'm going to share some of my favourite quick and easy meals and snacks! Today we're on dinner, with green risotto!

Ingredients:
60g Nuts
250g Risotto rice
Kale
Garden peas
Asparagus
Green beans
An onion
900ml Vegetable stock
Zest of one lemon
1.5 tbsp Vegan butter
3 tbsp Nutritional yeast
1 tbsp Mixed herbs
