We’re loving the shift to all the Fall recipes and feeling zuppa good about this easy soup!

Zuppa Toscana -
Ingredients:
4 slices bacon, cut into small pieces
1 lb ground Italian sausage
1 cup chopped onion
4 cloves garlic, minced
1/2 tsp fennel, crushed
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes
3 russet potatoes, peeled and sliced
4 cups chicken stock
2 cups water
3 cups chopped kale
1 cup heavy cream, room temperature
Parmesan, topping soup
Instructions:
Cook bacon until crispy, drain fat
Add sausage and cook until browned
Stir in onions and cook until translucent
Add garlic, spices and red pepper flakes, stir and cook about a minute
Add potatoes, chicken stock and enough water to cover everything
Bring to a boil, reduce heat, cover and simmer about 15 minutes
Add kale and simmer another 10 - 15 minutes
Stir in heavy cream
Serve sprinkled with Parmesan
