Dump & Bake: Tuscan Chicken

- 16 oz Orzo Pasta
- 1 to 2 lbs chicken breast
- Handful of baby spinach
- Sun dried tomatoes
- 1/3 cup diced shallots (red or regular onion will work as well)
- 2 tablespoons minced garlic
- 2 cups chicken broth
- 1 cup heavy cream
- Italian salad dressing
- Ranch seasoning packet
- Parmesan cheese (optional)

- Add orzo pasta to a casserole dish.
- On top add a handful of baby spinach.
- On top sun dried tomatoes, with some oil is just fine.
- On top add the onions and the garlic.
- On top add the chicken broth and the heavy cream.
- Mix all ingredients together.
- Add the chicken breast on top. Score the chicken on top so it cooks evenly and the spices get into the chicken. You can add 2-4 chicken breasts, depending on how big is your dish.
- Add the Italian salad dressing on top of the chicken.
- Add the ranch seasoning packet on top of the chicken. Add as much as you can, so the chicken is nicely coated.
- Cover with foil, and bake in over at 400 degrees for 1 hour.
- Once done, you can add some Parmesan cheese on top and serve.
