“Fusilli” also known as “Rotini” in the states. this spiral shaped pasta is iconic everywhere. For me this shape is the perfect carrier for a good “pesto”, it has so much surface area for all that oily basily goodness to coat! The name comes from the word “Fuso” meaning spindle. Fusilli were originally made by hand by winding small pasta strips around a spindle. Even though they are now mostly extruded through a pasta die, no spindle any more, we still call them…
