This is crunchy buttermilk fried chicken.


So how do we make it?
1. Let’s start with the buttermilk brine. Add some buttermilk to a bowl, alongside garlic powder, coriander, white pepper, soy sauce and whisk.
2. Throw in your chicken to this mix. I recommend using thighs and drumsticks.
3.Massage the marinade into the chicken and let it marinate for minimum of 2hours.
4. Now let’s make the dredge. All purpose flour, salt, ground ginger, onion powder, white pepper, coriander, garlic powder and MSG then mix.
5. Take your marinated chicken out, drizzle some of that marinade into your dredge and start coating.
6. Coat ALL your chicken ensuring no bald spots sorry Bien and now it’s ready for frying!
7. Get your chicken into fry oil around 180C - and fry it for 10-12 minutes.
And we are done! I served mine with fries, what are you having yours with?
