Authentic Asparagus Risotto, made in Menaggio, Lake Como! What a blast we had learning with our instructor Eva, owner of @cuciniamo.italiano. One of the many highlights of our trip in Italy!

We learned new and specific methods for making authentic Italian risotto. Most importantly Italians use carnaroli rice for risotto NOT arborio. The risotto uses a quick homemade vegetable stock , and making a vegetable sauce such as the asparagus leek to stir in is a wonderful way to enhance the flavor!
