300 grams of arborio rice
200 grams of butter
olive oil
vegetable broth
1 large onion finely chopped
vegetables (celery, leek, zucchini ...... carrots (not a standard ingredient))
mushrooms
wine

Parmesan
Saute the onion in olive oil and butter until translucent.
Saute vegetables (celery, leeks, carrots)
Add rice, fry until translucent.
Add wine. evaporate.
Add mushrooms.
Gradually add the broth, stirring constantly with a wooden spoon until the rice is ready. In the middle of cooking, add zucchini.
At the end, add butter and Parmesan,
You can add fried mushrooms.
Steam under the lid for 5 minutes, and serve sprinkled with grated Parmesan.
