Pasta Bolognese Bake

This one’s high in protein & low in carbs. In fact, you can even eat this if you’re doing keto!

I purchased the High Protein pasta from @wholesome.provisions as I wanted something more than Konjac noodles, but I needed it to be gluten free. This is made from Lupin & sunflower flour, so is relatively high in fiber, bringing the net carb count down.

Each packet contains 4 servings, but for me, it wasn’t enough, so I doubled up. It gave the dish a great texture, just like wheat pasta, but did have a slight lupin aftertaste (iykyk). Overall, I think it’s a great option if you fancy a little more than a meat and veggie dish. But I do have to point out it’s crazy expensive in Singapore, so add this to the list if you are planning a trip to the states.

Ingredients:
500g mince beef
1 onion diced
2 tbsp of avocado oil
2 cloves of garlic
1 jar of Passata
1 carrot diced
1/2 cup of celery diced
2 tbsp of balsamic vinegar
1 tsp salt
3/4 Basil leaves
1/2 tsp of paprika
1 tsp oregano
200g of ricotta
1 egg
Mozzerella sliced
1/2 cup grated parmesan

1. Sauté the onions & garlic in the oil. Add salt.
2. Once caramelised add in the mushrooms and cook for 2 minutes.
3. Add in the mince and allow the meat to turn brown.
4. Add in the Passata & fresh tomatoes.
5. Continue to cook until it starts to turn a deep red.
6. Add in the seasonings and the balsamic vinegar.
7. Add in the bone broth and allow the meat to simmer for a few minutes.
8. Boil the pasta in salted water for 5-6 minutes.
9. Drain then add in as much of the bolognese you need to coat the pasta.
10. Place it in a baking dish.
11. Mix the ricotta cheese with one egg, then spread over the pasta.
12. Sprinkle over the cheese.
13. Place under the grill until the cheese is all melted.

Trust me when I say it’s so bloody good.
