Here's an easy recipe to make the best, homemade pumpkin soup - It cooks in about 25 minutes and is the perfect soup to enjoy for lunch or dinner.
Ingredients:
pumpkin cut into cubes 1 kg
onion, finely chopped 2 pcs
olive oil 4 tbsp
vegetable broth 700 ml
whipping cream 100 ml
salt and freshly ground pepper
kurry as an option.
Heat the olive oil in a pot and slowly fry the onion on it. When vitrified, add the sliced pumpkin and fry for another 10 minutes.
Pour the broth and cook for another 15 minutes until the pumpkin is soft. Mix with a hand mixer, add cream, season with salt and pepper and cook for a few more minutes.
