Baby Courgette Creamy Pasta

Ingredients:
8 baby courgettes
2 garlic cloves (crushed)
1tbsp olive oil
Salt to taste
Pepper to taste
170g dried pasta
30g butter
5 thyme sprigs
10 cherry tomatoes (halved)
100ml double cream
1/3tsp nutmeg
1/2 cup pasta water
1 lime (zest only )
Parmesan cheese(as much as you want)


Method:
Slice the baby courgette(1 cm thick)
Add olive oil to the frying pan and fry courgettes, seasoned with salt and pepper from both sides until golden. Remove from the pan and set aside.
Meanwhile, cook your pasta. Reserve 1/2 cup of pasta water.
Add butter, thyme and garlic cloves to the same pan. Gary for 1-2 minutes and add tomatoes. Fry until golden brown, then discard thyme and add the double cream, salt, pepper and nutmeg. Mix well. Bring it to a boil and add pasta with pasta water, mix well. Add lemon zest and parmesan cheese, give it a good mix and serve with more parmesan cheese.
